Baked Sausage The easiest way to cook sausage.
Bob's Mother's Soup A quick, hearty meal.
Skewered Sausage
Caramelized Onions or Shallots
Horseradish Sauce
Pastitso Greek style Macaroni and Cheese.
Remember - Don't prick sausages before cooking!
* Saute onion and celery briefly in olive oil. Add sausage and crumble while it cooks. (if using smoked sausage add later.)
* Add stock and spaghetti sauce. Simmer 5-10 minutes. If using smoked sausage, add after the soup has simmered a few minutes. Meanwhile cook pasta, drain and set aside.
* Add beans to soup mixture. Add pasta. When heated through ladle into bowls.
* Serve with fresh grated Parmesan or Romano cheese.
* Good with garlic bread and salad.
* Preheat broiler or B-B-Q and broil until heated through, approx 10 minutes. Turn several times.
* Serve with Caramelized Onions, Horseradish Sauce (following) and various mustards. (A good sweet mustard is President's Choice - Ranch Style.)
* Serve skewered sausage with oven baked potatoes or a potato gratin and salad.
* Melt butter and cook onions until translucent. Add sugar and cook intil deep golden brown. Season with salt and pepper.
* Mix all ingredients and refrigerate. (Can be made 2 days ahead.)
* Saute sausage, onion and garlic (crumble the meat) until golden brown. Add parsley, cinnamon, nutmeg, salt, pepper, wine and tomato sauce. Simmer for approx 30 minutes.
* Cook pasta according to the directions on the package. When
cooked, rinse and drain. Place in a large bowl.
* Add melted butter, the beaten eggs and a generous handful of
cheese. Mix well.
* Melt butter, add flour, stir until smooth. Cook for several minutes and then gradually add milk, stirring constantly until thickened, add cheese.
* Bake at 350 for about 45 minutes. Cool slightly and cut into squares.
