We hope you enjoy some of the recipes we offer here as much as we and our friends have. This page will grow as time goes on so be sure to check in now and then to see whats new. *BAKED SAUSAGE...the easiest way to cook sausage!
Bake, uncovered in a lightly oiled pan at 350 for 20-30 minutes. (For frozen sausage add approx. 10 minutes and separate links as soon as possible.)
Turn several times for even browning.
Sausages will release some juice which makes a nice sauce or gravy.

Remember - Don't prick sausages before cooking!

*BOB'S MOTHER'S SOUP
* 1 large onion, chopped.
* 2-3 links sausage, casing removed (Chorizo or Hot Italian makes a good spicy soup. For a milder version try medium Italian or Farmer and for a different flavour try cut up Smoked Chorizo, Andouille or Ukranian.)
* 2-3 stalks celery.
* 2 cups beef stock (or one can beef consomme and one can of water.)
* 2 cups homemade or bottled spaghetti sauce.
* 2 cups dry pasta (penne, wagon wheels, etc.), cooked and drained.
* 1 can (approx. 1 cup) beans (navy, pinto, chickpeas, etc.)
* Fresh Parmesan or Romano cheese.

* Saute onion and celery briefly in olive oil. Add sausage and crumble while it cooks. (if using smoked sausage add later.)

* Add stock and spaghetti sauce. Simmer 5-10 minutes. If using smoked sausage, add after the soup has simmered a few minutes. Meanwhile cook pasta, drain and set aside.

* Add beans to soup mixture. Add pasta. When heated through ladle into bowls.

* Serve with fresh grated Parmesan or Romano cheese.

* Good with garlic bread and salad.

*SKEWERED SAUSAGE
* 3 lbs. assorted smoked sausage. (Smoked Chorizo, Andouille, Ukrainian or Superdogs), cut diagonally into 1/2 inch slices. Thread onto skewers. (If using Bamboo, pre-soak 20-30 minutes.)

* Preheat broiler or B-B-Q and broil until heated through, approx 10 minutes. Turn several times.

* Serve with Caramelized Onions, Horseradish Sauce (following) and various mustards. (A good sweet mustard is President's Choice - Ranch Style.)

* Serve skewered sausage with oven baked potatoes or a potato gratin and salad.

*CARAMELIZED ONIONS or SHALLOTS.
* 6 tbsp. butter.
* 2 lbs. onions or shallots, sliced thin.
* 1 tsp. sugar.

* Melt butter and cook onions until translucent. Add sugar and cook intil deep golden brown. Season with salt and pepper.

*HORSERADISH SAUCE
* 2 cups sour cream.
* 1/4 cup prepared horseradish.
* 1/4 cup minced apple.
* 2 tsp. crushed caraway seeds.

* Mix all ingredients and refrigerate. (Can be made 2 days ahead.)

*PASTITSO...Greek style Macaroni and Cheese.
Meat Sauce(12 servings)
* 4 tbsp. olive oil.
* 2 pkg. (approx. 1 kg.) Loukaniko sausage, casings removed.
* 1 large onion, chopped.
* 1-2 tbsp. parsley.
* 1 large clove garlic, minced.
* 1 tsp.nutmeg.
* 1-1/2 cups tomato (spaghetti) sauce.
* 1/2 cup white wine.

* Saute sausage, onion and garlic (crumble the meat) until golden brown. Add parsley, cinnamon, nutmeg, salt, pepper, wine and tomato sauce. Simmer for approx 30 minutes.

Pasta
* 1 lb. elbow macaroni or penne noodles.
* 1/3 cup butter, melted.
* salt and pepper.
* 3 beaten eggs.
* grated cheese (Parmesan, Feta, Asiago or Romano.)

* Cook pasta according to the directions on the package. When cooked, rinse and drain. Place in a large bowl.
* Add melted butter, the beaten eggs and a generous handful of cheese. Mix well.

Bechamel Sauce
* 1/4 cup butter
* 3-4 tbsp. flour
* 2 cups milk
* 1 cup grated cheese (Romano, etc.)

* Melt butter, add flour, stir until smooth. Cook for several minutes and then gradually add milk, stirring constantly until thickened, add cheese.

To assemble:
*Spread half the pasta mixture on the bottom of a greased 9x13 baking pan. Cover evenly with meat sauce. Sprinkle with some grated cheese. Cover with remaining pasta. Sprinkle with cheese, cover with bechamel sauce. Sprinkle lavishly with cheese.

* Bake at 350 for about 45 minutes. Cool slightly and cut into squares.
