The Galloping Goose Sausage Company is located just up Lindholm Road from the old rail-bed of the Galloping Goose Railroad, SW of Victoria BC in rural Metchosin.
Our company has been in existence since 1988. It originated from the desire of one of the partners to taste the ethnic sausage "Boerewors" of his native country South Africa. (Johannes Wessels, John or "Wes" to most)
That led to a partnership with a long time Polish sausage-maker who taught him many of the age old European sausage-making techniques. The mix of cultures and modern trends in eating, ie: less fat, no preservatives, has led to the wide palette of tasty, nutritional sausage reflecting traditional flavours from around the world.

Since sausage-making is our only business, all the ingredients are of the best quality - prime cuts of meat, fresh local herbs and honey, fresh fruit, good brandy and sherry, all come together to make a truly unique eating experience. Unlike many other meat producers there are no byproducts used in our sausage.


 

COOKING TIPS

* Our sausages are lean (less than 8g fat per 100g serving). Do not prick the skins. Add 1 tsp of oil to the pan to prevent sticking. Do not try to separate the links before they are thawed.

* Cook on low heat for first five minutes with cover on. Remove cover and brown.

* B-B-Q on low tto medium/low heat.Turn frequently.

* Frozen sausage can be put directly on B-B-Q or in pan: low heat.Thawing or partial cooking in microwave works well.

* Boiling or steaming toughens the skin.
