Thai Fish Cakes
Ingredients
Dipping Sauce
1/8 c fish sauce
1/8 c sugar
1/4 c water
1/8 c lime juice
1 shallot, thinly sliced
1 small chili, thinly sliced
Cakes
Group 1:
1 lb (white) fish - or a combination of fish and imitation crab or prawns
3 tbsp cornstarch
1 tbsp fish sauce
1 beaten egg
3 tsp Thai red curry paste
1-2 tsp chilis (optional) *
2 tsp minced garlic * I used garlic chili sauce
Group 2:
100 gram green beans, chopped fine
2 spring onions, chopped fine
1/2 c corriander leaves (or try Basil leaves)
Method
Mix all of Group 1 ingredients in a food processor and whiz a few times until blended. Then stir in Group 2 ingredients by hand. Form into patties - large or small to taste. Fry until crispy on the outside. Serve with dipping sauce .
