Lemon Yogurt Scones

These scones are amazingly easy and especially good with apricot preserves.
To make 12 scones:
3 cups white flour
3 Tbs sugar
1-1/2 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
3/4 c margarine
2 - 175 ml containers lemon yogurt (that's about 1-1/3 cups)
2 tsp lemon rind
2 tsp lemon juice
2 tsp chopped lemon thyme or lemon balm (optional)

Sift together dry ingredients. Cut in margarine with a pastry blender until crumbly. Add yogurt, rind and herbs and blend with a fork to make a soft dough. Add additional flour if necessary to make dough "manageable". Divide the dough into 2 halves. Roll out each half onto a floured surface to make a circle about 3/4" deep. Cut the circles into 6 wedges and bake on an ungreased baking sheet at 425 degrees for 12-14 minutes.
